This 9" Gyuto is the kitchen workhorse. If you can only afford one kitchen knife buy this knife. it is large and rugged enough to perform almost all heavy-duty tasks in the kitchen yet sharp and light enough to manage many tasks that require fine motor skills. The knife is properly balanced to minimize fatigue and its edge will remain razor sharp longer than your average knife.

The 8" German pattern is widely used for home cooking. It is the "Western" style knife most people are used to. The shorter blade can be easier to handle for less experienced cooks. However, in the hands of an experienced cook, this knife can work wonders. This knife is a great choice for home and commercial applications alike.

The 6" utility knife or mini chef is the most widely used in my kitchen. mainly, because everybody uses it! It is a comfortable size for my kids, it handles most of the smaller task extremely well, and let's face it, you don't need a 9" Gyuto to cut a sandwich.

The Nakiri is a fantastic vegetable knife. The blade profile is thin which allows it to cut even hard vegetables with ease. I first made this knife several years ago because it was the "in thing" among chefs. Then I realized how useful this blade can be. If you are vegetarian or consume a lot of vegetables, this is a must in your kitchen.
Note: This knife is not a cleaver. It is not meant chop bone. This knife-edge has a very thin profile for cutting hard root vegetables without cracking them.

Dreamer Forge's theme is "field to table". This knife is fantastic for breaking game down, deboning or Frenching rib roasts at home. I enjoy butchering and breaking down whole animals. This knife is my go-to on butcher day. Oh, it can even be used as a fillet knife in a pinch!

The 9" fillet knife is my solution to a one knife shop. It is short enough to fillet panfish, yet large enough to handle a trophy Striped Bass or a tuna. This knife is ergonomically designed for maximum control even in wet conditions. The knife in this picture is my personal knife!

The Hunter is a 4" mid-weight drop point designed to withstand the tough tasks hunters submit their knives to. The drop point makes it great for field dressing yet it has enough of a belly to also be used as a skinner. The medium weight makes it easy to carry in the field and even as an everyday carry should you choose to do so.

The Tactical Hunter is a clip point knife for those guys that desire a little bit of badass on their blade. It has the appearance of a tactical blade with a bit more refining. The clip point allows makes this knife great for field dressing game. This knife adds a nice twist to your typical hunting knife.

The Integral Drop Point is one of my favorite knives to make. The blade is roughly 4.5" long hand forged from a round piece of 52100 ball bearing bar. The bolster, tang and blade are all one piece hence the name Integral. This knife is elegant light and fast. The 52100 steel is my favorite steel to work with and makes an outstanding blade. It is the perfect balance between toughness and hardness.

It is small, light and less intimidating than other full tang knives. It is also a great purse knife providing a lot of utility and protection should the need arise.

The Straightback
The Straightback is a 5" midnight blade for those whom prefer to carry a heavier duty blade. The blade is strong and capable of carrying out heavy duty tasks. The scalloped handle allows for a secure grip in all conditions. The scalloped handle has a rough finish (220 grit) for improved grip. This knife is also available with a smooth handle for those who prefer a more traditional look.

The Mosquito is a great option for those whom prefer a fixed blade but must carry it discreetly. The knife and sheath are designed to fit flat in your pocket. Once in your pocket they are truly invisible. The blade is roughly 1.5 inches long. The ring handle allows for a secure hold. Do not be fooled by the small size. this little guy is capable of doing a lot of work!

The Bluefin
The Bluefin is designed after my personal fillet. It is a stiff flat ground 9" curved blade (I prefer a stiff fillet knife over a flexible blade) great for tuna and other large fish. It also makes a great slicer and carver which makes this knife one of the most used knives in my kitchen. The 9" blade allows this knife to fillet everything from panfish to tuna. It is a bit oversized for small fish and a bit undersized for very large fish. But it is perfect for everything in between.

The Steelhead is a traditional straight semi-flex fillet knife. At 9"long, it's a great knife for larger fish like salmon and steelhead. The semi-flex blade provides stability and strength while still being able to flex enough to skin fish.

The Walleye is a traditional straight semi-flex fillet knife. At 7" long, It's a great knife for freshwater fish as well as inshore saltwater. This knife can also double as a boning knife for those fishermen that spend the winter months out in the woods. I recommend this knife to anglers targeting fish up to 30" in length. It is one of my best sellers around the Chesapeake Bay.

The Snakehead is the same blade pattern as the Walleye. It is named after an invasive species of fish that has found a perfect home in the tributaries of the lower Chesapeake Bay. The Snakehead fish is cover in a heavy slime. This is why the handles on this filet knife are scalloped to improve grip under the slimmest of conditions.
